Apples, apples everywhere... but let's take a minute to appreciate pears. As I learned from Elise Richer, author of Always in Season, pears do make a short seasonal appearance in New England in September and October.
Last fall I had great fun testing recipes for the cookbook, and tried my hand at this amazing Brown Sugar Pear Cake. It's like an upside-down cake, and I was a little scared at first. But it was super easy to make, it looked totally professional, and it was delicious. I've since made it at least half a dozen times, and it's been a hit each time.
I consider this one of the great unexpected perks of being a book editor. Who knew I'd be making Veiled Peasant Girls, Brown Sugar Pear Cake, and Raspberry Tarts, all in the line of duty?
Here is a link to the recipe.
